Turkey Burgers

What You'll Need:

1 large onion, peeled and finely chopped
2 tbsp olive oil
1 large carrot, grated
2 garlic cloves, peeled and crushed
3 oz rolled oats
1 lb ground turkey
4 oz dried apricots, finely chopped
1 egg, lightly beaten

Preparation:

Preheat oven to 380 degrees Fahrenheit.

In a large skillet, heat one tbsp of olive oil and sauté the chopped onion for about 5 minutes or until soft. Add the garlic and cook for a further minute. Stir in the oats and cook for about 2 minutes. Pour the oat mixture into a mixing bowl and allow to cool.

Add the remaining ingredients to the oat mixture and season with salt and pepper. Mix thoroughly with your hands and shape into 8 burgers.

Heat the remaining tablespoon of olive oil in a non-stick frying pan and fry each of the burgers on each side until browned (about 3 – 4 minutes). Place the seared burgers onto a baking sheet and bake in the oven for about 15 minutes. Serve immediately.
