Tortillas ala Vegetables

What You'll Need

1 (12inch) flour tortilla
1 green onion, finely chopped
¾ cup Monterey Jack/Cheddar cheese blend, shredded
½ cup canned whole kernel corn, drained
½ cup diced green bell pepper
½ cup canned black beans, drained

Preparation:

Preheat and grease a large skillet. Place the tortilla into the heated skillet and turn it over once. Cook the tortilla for one minute, then sprinkle evenly with the cheese blend. Top with the corn, green pepper, black beans and green onion. Cook until the cheese is melted. Put quickly under a broiler until the cheese is slightly browned, then slide the tortilla onto a cutting board. Cut into wedges and serve immediately with homemade guacamole and a dollop of fat-reduced sour cream.
