Super Stir Fry

What You'll Need:

2 tbsp vegetable oil
1 lb carrots, grated
8 oz leeks, shredded
2 oranges, peeled and segmented
2 tbsp tomato ketchup
1 tbsp brown sugar
2 tbsp soy sauce
3.5oz walnuts, chopped


In a wok, heat the vegetable oil and sauté the carrots and leeks for a few minutes until almost tender. Add the orange and gently stir until heated through. In a small bowl combine ketchup, sugar and soy sauce. Add the mixture to the stir fry and cook for a further few minutes.
