Spinach Salad

What You'll Need

Dressing:

1/3 cup plain low-fat yogurt
2 tbsp non-fat mayonnaise
2 tbsp Dijon mustard
1 ½ tsp white wine vinegar
1 tsp white sugar
¼ tsp sea salt
¼ tsp black pepper
¼ tsp Worcestershire sauce

Salad:

6 oz fresh baby spinach, washed
1 yellow bell pepper, deseeded and cut into 1 inch chunks
¼ medium red onion, thinly sliced
1 avocado, peeled and diced

Instructions: Place the baby spinach into a large bowl, top with red pepper, sliced onion and avocado. In the meantime, combine all the dressing ingredients. Drizzle over the baby spinach, toss gently and serve immediately.
