Shrimp Veggie Style

What You'll Need

2 ½ cups vegetarian broth
12 oz snow peas, trimmed
1/3 cup green onion, chopped
4 small tomatoes, diced
3 lbs shrimp, peeled and deveined
¼ cup cornstarch
¼ cup soy sauce
¼ cup cold water

Preparation:

In a large saucepan, bring 2 ½ cups of broth to a boil and add shrimp, green onion, soy sauce and salt. Boil for about 3 minutes, then reduce heat.

Meanwhile, in a small bowl, mix cornstarch into the cold water. Add to the shrimp mixture. Cook until the sauce starts to thicken, then add the snow peas and tomatoes. Cook for a further few minutes. Serve immediately
