Salad Nicoise

What You'll Need:

8 new potatoes, cooked and cut into quarters lengthwise
½ English cucumber, cut into chunks
½ lb green beans, cooked
1 head of lettuce of your choice, washed and torn
4 tomatoes, cut into quarters
4 hard boiled eggs, cut into quarters
4 oz black olives, pitted
2-3 (6oz) cans of tuna, drained and flaked
Spring onions, chopped
Fresh parsley, washed and chopped
Anchovies (optional), cut into thin strips

Vinaigrette:

7tbsp extra virgin olive oil
3 tbsp red wine vinegar
2 tbsp freshly chives, snipped
2 garlic cloves, peeled and minced
Salt and pepper

Preparation:

Vinaigrette: In a small bowl, whisk together the olive oil, vinegar, chives, garlic and season with salt and pepper. Arrange the lettuce leaves in a large bowl and top with spring onions, tomatoes, potatoes, beans, anchovies and tuna. Add the vinaigrette and carefully toss the salad. Garnish with the olives and eggs.
