Pumpkin Rice Dish
1 ½ cups brown rice
3 cups water
3 cloves garlic, finely chopped
2 tbsp olive oil
1 (15oz) can pumpkin
2 large carrots, peeled and finely grated
¼ tsp salt
¼ tsp ground cloves
Place water and brown rice into a saucepan and bring to a boil over high heat. Reduce heat, cover and simmer for about 45 to 50 minutes or until the rice is tender and the liquid has been absorbed.
In the meantime, heat oil in a skillet and cook garlic until fragrant. Reduce heat, then add pumpkin and stir for about 1 minute. Add grated carrots and stir again for another 2 minutes. Add salt and cloves, give it a quick stir and remove from heat. Mix in the cooked brown rice and serve immediately. Serves 8.
