Ham and Cheese

What You'll Need

8 large Portobello mushrooms
3 scallions, finely chopped
2 tbsp Parmesan cheese, grated
2 oz fresh breadcrumbs
1 tbsp fresh parsley, chopped
2 tsp fresh oregano, chopped
2 tbsp extra-virgin olive oil
5 oz cooked ham, finely chopped
Salt and pepper


Heat oven to moderate temperate.

Remove the stalks from the Portobello mushrooms and finely chop stalks. In a bowl, combine chopped stalks, breadcrumbs, Parmesan, parsley, oregano, ham and scallion. Season well with salt and pepper. Add a little bit of water to “glue” the mixture together.

Place mushrooms on a baking sheet. Divide the mixture evenly on the Portobello mushrooms and drizzle with extra olive oil. Cover loosely with tin foil and bake for about 10 minutes. Take off foil and bake for a further 5 minutes. Serve immediately!
