Chicken and Pears

What You'll Need

6 boneless, skinless chicken breasts
¼ cup flour
1 tbsp olive oil
2 tbsp butter
1 tbsp fresh ginger, minced
1 onion, chopped
1 cup vegetable broth
2 pears, peeled and sliced
Salt and pepper

Preparation:

Season each chicken breast with salt and pepper and coat with flour.

In a large skillet, heat olive oil and butter, add chicken and brown on both sides, about 5 minutes total. Do not cook through. Remove chicken.

Add ginger and onion to the same skillet and sauté until tender, about 5 minutes. Pour in the broth and bring to a quick boil. Place chicken into the skillet and add pear slices. Reduce heat and simmer mixture for about 7 – 10 minutes or until the chicken is cooked through and no longer pink inside. Serve immediately with couscous or rice.
