Cannelini Bean Salad

What You'll Need

14oz can cannellini beans, drained
12-16 black olives
1 small red onion, thinly sliced
3 tbsp freshly chopped parsley
4 tbsp olive oil
Juice of ½ lemon
2 hard-boiled eggs, chopped
Salt and pepper

Preparation:

Whisk together the olive oil and lemon juice, salt and pepper in a salad bowl. Add the beans, onion and parsley and toss. Top the salad with olives and chopped hard-boiled egg.
