Burrito For Breakfast


1 tbsp olive oil
¼ cup cooked ham, diced
¼ cup fresh mushrooms, diced
¼ cup onion, diced
¼ cup yellow pepper, sliced
¼ cup red pepper, sliced
Dash of cayenne pepper
Salt and pepper to taste
4 tortilla shells
Cheddar cheese, shredded
Tomato salsa


Add olive oil to skillet and heat over medium heat. Add ham, mushrooms, onion, peppers and cook for about 3 to 4 minutes, constantly stirring. Add salt, pepper and a pinch of cayenne pepper to taste. Drain this mixture well.

Heat tortilla shells slightly in the oven or microwave (about 20 seconds).

Scoop ¼ of mixture into each tortilla, sprinkle with cheddar cheese and top with tomato salsa.
