Buckwheat Pancakes

What You'll Need:

½ cup buckwheat flour
¼ cup gluten-free flour mix
¼ cup potato starch
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
2/3 cup milk
2 tsp sugar
1 egg
1 tsp vanilla extract
¼ cup vegetable oil

Preparation:

Combine the flours, sugar, baking soda, baking powder and salt in a large mixing bowl.

In a separate small bowl, whisk together the milk, egg, vanilla extract and oil. Then add the wet ingredients to the dry ingredients and whisk well. Set aside for a few minutes.

Heat a non-stick frying pan and spoon in some batter with a ladle. Brown each pancake on both sides. Serve immediately.
