Arugula Potato Salad

What You'll Need

1 ½ lbs new potatoes
4 green onions, sliced
1 tbsp white vine vinegar
2 tbsp dry white wine
1 clove of garlic, finely minced (optional)
1 bunch arugula, washed and prepared
Salt and pepper to taste

Preparation:

Boil the potatoes until done and while still warm cut into 1/2inch thick slices.

In a large bowl, combine the green onions, vinegar, white wine, garlic and season well. Add the potato slices and toss carefully until well coated.

Arrange the arugula leaves on four plates and place the potato salad in the middle. Serve while still warm.
